Description
Crispy, golden zucchini fries made in an air fryer for a healthier snack option.
Ingredients
Scale
- 2 medium zucchini, cut into 3-inch sticks, about 1/2-inch thick
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 tablespoon milk
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare Breading Station: Set up three shallow bowls: add flour to one, whisk eggs and milk in the second, and combine panko, grated Parmesan, garlic powder, paprika, salt, and black pepper in the third.
- Coat Zucchini Sticks: Dredge each zucchini stick in flour, dip in the egg mixture, then fully coat with the panko-Parmesan mixture, pressing to ensure even coverage.
- Preheat Air Fryer: Preheat air fryer to 400°F for 3 minutes.
- Arrange and Cook Zucchini Fries: Place breaded zucchini sticks in a single layer in the air fryer basket. Work in batches if necessary to prevent overcrowding.
- Air Fry Until Crisp: Air fry zucchini fries for 8 to 10 minutes, flipping halfway, until golden brown and crisp.
- Serve: Serve immediately while hot with marinara, ranch, or garlic aioli for dipping.
Notes
- For added flavor, you can experiment with different spices in the panko mixture.
- Ensure the zucchini sticks are as uniform in size as possible for even cooking.
- Leftover zucchini fries can be stored in an airtight container, but they are best when freshly made.
