Description

A vibrant breakfast or snack featuring creamy avocado, tart green apple, and crunchy pumpkin seeds on toasted whole grain bread.


Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • ½ green apple, thinly sliced
  • 2 tablespoons pumpkin seeds
  • 1 teaspoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon fresh cilantro or parsley, chopped (optional)
  • 1 teaspoon extra virgin olive oil (optional)

Instructions

  1. Toast the two slices of whole grain bread until they are golden and crisp.
  2. Halve the avocado and carefully remove the pit. Scoop the flesh into a mixing bowl.
  3. Use a fork or masher to mash the avocado with lemon juice, salt, and pepper until almost smooth but still chunky.
  4. Spread the avocado mixture generously over each slice of toasted bread.
  5. Arrange the sliced green apple atop the avocado layer.
  6. Sprinkle the pumpkin seeds over each piece.
  7. Finish with a drizzle of olive oil and garnish with cilantro or parsley if desired.
  8. Serve immediately while the bread is still warm and crisp.

Notes

Prep avocado mash ahead of time and store in an airtight container with a bit of lemon juice. Avoid overtoasting the bread.
