- 1 ripe avocado
- ½ green apple, thinly sliced
- 2 tablespoons pumpkin seeds
- 1 teaspoon fresh lemon juice

- 1 teaspoon extra virgin olive oil (optional)
Instructions
- Toast the two slices of whole grain bread until they are golden and crisp.
- Halve the avocado and carefully remove the pit. Scoop the flesh into a mixing bowl.
- Use a fork or masher to mash the avocado with lemon juice, salt, and pepper until almost smooth but still chunky.
- Spread the avocado mixture generously over each slice of toasted bread.
- Arrange the sliced green apple atop the avocado layer.
- Sprinkle the pumpkin seeds over each piece.
- Finish with a drizzle of olive oil and garnish with cilantro or parsley if desired.
- Serve immediately while the bread is still warm and crisp.
Notes
