Instructions
- Preheat your oven to 350°F (175°C) and grease your muffin tin or line it with paper liners.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well.
- In another bowl, mix the mashed banana, milk, peanut butter, honey (or maple syrup), and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- If desired, add toppings like chopped nuts or chocolate chips.
- Bake for 20-25 minutes, or until the tops are golden.
- Let cool slightly before removing from the tin.
