Description

Best-Ever Blueberry Thyme Chicken is a juicy and creamy dish featuring tender chicken breasts marinated in a flavorful blueberry and thyme sauce.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried thyme)
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare Marinade: In a bowl, combine olive oil, honey, thyme, garlic, balsamic vinegar, salt, and pepper. Mix well.
  2. Add Blueberries: Gently fold in the fresh blueberries, careful not to smash them.
  3. Marinate Chicken: Place the chicken breasts in a large resealable bag or bowl. Pour marinade over the chicken, ensuring each piece is well-coated. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours for maximum flavor).
  4. Preheat Oven: Preheat your oven to 400°F (200°C).
  5. Sear Chicken: Heat a large oven-safe skillet over medium-high heat. Add a little olive oil, then remove chicken from marinade (reserve marinade for later) and sear each breast for 3-4 minutes on each side until golden brown.
  6. Add Marinade: Pour the reserved marinade with the blueberries over the seared chicken in the skillet.
  7. Bake: Transfer the skillet to the preheated oven. Bake for 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Rest: Remove the skillet from the oven and let the chicken rest for 5 minutes to allow juices to redistribute.
  9. Serve: Slice the chicken and spoon the blueberry sauce on top before serving.

Notes

  • For a tangy flavor, feel free to add a splash of lemon juice.
  • This dish pairs well with rice or a fresh salad.
  • Ensure not to overcook the chicken to keep it moist and juicy.
