Description

Ingredients

  • 2 sheets frozen puff pastry, thawed
  • 2 cups fresh blackberries
  • 120 ml water
  • 1 tablespoon freshly squeezed lemon juice
  • 150 g granulated sugar
  • 225 g goat cheese, crumbled
  • Zest of 2 lemons
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme leaves, finely minced
  • 1 large egg
  • 15 ml water

Instructions

  1. Combine blackberries, water, lemon juice, and granulated sugar in a small saucepan. Bring to a boil over medium-high heat, then reduce to medium and simmer for 20–30 minutes, stirring occasionally and smashing the berries with a wooden spoon until thickened. Remove from heat and allow to cool to room temperature.
  2. Remove both sheets of puff pastry from the freezer. Thaw at room temperature for 20–25 minutes until pliable but still cool to the touch.
  3. On a lightly floured surface, roll out one sheet of puff pastry into a rectangle. Evenly distribute half of the crumbled goat cheese and half of the cooled blackberry jam across the surface.
  4. Cut the prepared pastry into 12 horizontal strips, approximately 2.5 cm wide each. Fold each strip lengthwise in half to enclose the filling. Holding each end, gently twist in opposite directions to form spirals, stretching slightly if needed. Place twists onto a parchment-lined baking sheet.
  5. Repeat the rolling, filling, slicing, folding, and twisting process with the second sheet of puff pastry, using the remaining goat cheese and jam. Arrange the formed twists alongside the first batch.
  6. Preheat oven to 200°C (400°F). In a small bowl, combine lemon zest, raw sugar, and minced thyme, mixing thoroughly.
  7. Whisk the egg with 15 ml water to create an egg wash. Brush the surface of each pastry twist with the egg wash, then sprinkle generously with the lemon-thyme sugar mixture.
  8. Bake in the preheated oven for 16–18 minutes or until golden and crisp. Transfer to a wire rack and allow to cool to room temperature before serving.
