Description

  • 2 cups fresh blueberries
  • 2 tablespoons butter
  • Powdered sugar for dusting (optional)
  • Maple syrup for serving (optional)

Instructions

  1. Whisk together the eggs, milk, vanilla extract, ground cinnamon, and sugar in a large mixing bowl until smooth.
  2. Preheat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter.
  3. Dip each slice of bread into the egg mixture for 5 to 10 seconds per side.
  4. Place the soaked bread slices in the skillet and cook for 3 to 4 minutes on each side until golden brown.
  5. Warm the blueberries in a small saucepan over low heat for 2 to 3 minutes, stirring occasionally.
  6. Transfer the French toast to serving plates and top with warm blueberries, powdered sugar, and maple syrup if desired.

Notes

For best results, use day-old bread for better absorption of the custard mixture. Can customize with fruits like strawberries or bananas.
