Description

Indulge in a warm, luscious breakfast with Blueberry Stuffed French Toast filled with cream cheese and fresh blueberries, drizzled with maple syrup.

Ingredients

Scale
  • 4 slices of brioche or challah bread
  • 1 cup fresh blueberries
  • 4 oz cream cheese, softened
  • 2 eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1 tbsp sugar
  • Butter or oil for cooking
  • Maple syrup for serving

Instructions

  1. In a bowl, spread the softened cream cheese with blueberries and sugar, blending until luscious.
  2. In another bowl, whisk together the eggs, milk, and vanilla extract until combined.
  3. Take two slices of bread and spread the blueberry cream cheese mixture between them to create a sandwich.
  4. Heat butter or oil in a skillet over medium heat.
  5. Carefully dip the stuffed bread into the egg mixture, letting it soak just enough.
  6. Place the bread in the skillet, cooking until golden brown on both sides (about 2-3 minutes per side).
  7. Serve immediately with a drizzle of maple syrup.

Notes

Make the cream cheese filling the night before for quick preparation in the morning. Feel free to use an air fryer or bake in the oven as alternatives.
