Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream ½ cup of softened unsalted butter with 1 cup of granulated sugar until light and fluffy.
- Add 1 large egg and 1 teaspoon of vanilla extract; mix until well combined.
- Combine 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of baking soda in another bowl. Gradually add to the wet ingredients, stirring gently.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space for spreading.
- Bake for 10-12 minutes, or until edges are lightly golden. Cool on wire rack.
- Prepare the vanilla pudding according to package instructions or homemade recipe, then fold in ½ cup of heavy cream until smooth.
- Assemble the cookies by spreading vanilla filling on the bottom of half the cookies and topping with the remaining cookies.
- Make ganache by heating ½ cup of heavy cream, pouring it over 1 cup of chocolate chips, and stirring until smooth.
- Drizzle ganache over assembled cookies and refrigerate for about 30 minutes to set before serving.
