Ingredients

  • Vanilla pudding mix
  • 1 cup of chocolate chips

  • Flaxseed meal or applesauce (for a vegan alternative)
  • Cornstarch and sugar (for homemade vanilla pudding)
  • Non-dairy chocolate alternative (for a vegan treat)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream ½ cup of softened unsalted butter with 1 cup of granulated sugar until light and fluffy.
  3. Add 1 large egg and 1 teaspoon of vanilla extract; mix until well combined.
  4. Combine 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of baking soda in another bowl. Gradually add to the wet ingredients, stirring gently.
  5. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space for spreading.
  6. Bake for 10-12 minutes, or until edges are lightly golden. Cool on wire rack.
  7. Prepare the vanilla pudding according to package instructions or homemade recipe, then fold in ½ cup of heavy cream until smooth.
  8. Assemble the cookies by spreading vanilla filling on the bottom of half the cookies and topping with the remaining cookies.
  9. Make ganache by heating ½ cup of heavy cream, pouring it over 1 cup of chocolate chips, and stirring until smooth.
  10. Drizzle ganache over assembled cookies and refrigerate for about 30 minutes to set before serving.
