- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour

- 1 cup heavy cream
- 1 cup powdered sugar
- 4 ounces semisweet chocolate, chopped
- 1/4 cup light corn syrup
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each, and stir in the vanilla extract.
- Whisk together the flour, baking powder, and salt in a separate bowl before gradually mixing into the creamed mixture.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Prepare the vanilla cream filling by whipping the heavy cream with powdered sugar until stiff peaks form.
- Cut the cookies in half horizontally once cooled and fill the bottom half with whipped cream.
- For the chocolate glaze, melt the semisweet chocolate with corn syrup until smooth.
- Drizzle the chocolate glaze over the filled cookies and let set before serving.
Notes
Allow cookies to cool completely before filling to prevent melting the cream.
