- 8 slices brioche or challah bread, cut thick
- 6 slices thick-cut bacon
- 4 large eggs
- 1/2 cup whole milk
- 1 tablespoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 2 ounces cream cheese, softened
- 1 cup pure maple syrup
- 2 tablespoons bourbon
- 1 teaspoon vanilla extract
- Pinch fine salt
Instructions
- Preheat your oven to 400°F (200°C). Line a baking tray with foil and place a wire rack on top.
- Arrange bacon slices on the wire rack and bake for about 15 minutes or until crispy. Transfer to a paper towel-lined plate and chop finely.
- In a shallow bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until smooth.
- In another bowl, mix softened cream cheese with chopped bacon until well incorporated.
- Create a pocket in each slice of bread and fill with the bacon-cream cheese mixture.
- Dip each stuffed slice into the egg mixture until evenly coated.
- Melt butter in a non-stick skillet over medium heat. Cook each stuffed slice for 3-4 minutes on each side until golden brown.
- Prepare the maple bourbon glaze by warming maple syrup, bourbon, vanilla extract, and salt in a small saucepan over low heat for 2 minutes.
- Serve the Bourbon Maple Bacon Stuffed Toast warm, drizzled with the glaze.
Notes
Best served hot with fresh fruit or whipped cream. Store leftovers in an airtight container for 1-2 days.
