Description

Indulgent breakfast featuring crispy bacon, cream cheese, and maple syrup stuffed in buttery bread.


Ingredients

  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch fine salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking tray with foil and place a wire rack on top.
  2. Arrange bacon slices on the wire rack and bake for about 15 minutes or until crispy. Transfer to a paper towel-lined plate and chop finely.
  3. In a shallow bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until smooth.
  4. In another bowl, mix softened cream cheese with chopped bacon until well incorporated.
  5. Create a pocket in each slice of bread and fill with the bacon-cream cheese mixture.
  6. Dip each stuffed slice into the egg mixture until evenly coated.
  7. Melt butter in a non-stick skillet over medium heat. Cook each stuffed slice for 3-4 minutes on each side until golden brown.
  8. Prepare the maple bourbon glaze by warming maple syrup, bourbon, vanilla extract, and salt in a small saucepan over low heat for 2 minutes.
  9. Serve the Bourbon Maple Bacon Stuffed Toast warm, drizzled with the glaze.

Notes

Best served hot with fresh fruit or whipped cream. Store leftovers in an airtight container for 1-2 days.
