- Brown the Butter: In a light-colored saucepan, melt the unsalted butter over medium heat. Stir occasionally until the milk solids brown and a nutty aroma arises; this takes 5-7 minutes. Pour into a heat-proof bowl and let cool for 30-45 minutes.
- Combine the Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- Prepare Espresso: Dissolve espresso powder in 1 teaspoon hot water.
- Mix Butter and Sugars: Beat cooled brown butter with brown sugar and granulated sugar for 2-3 minutes until light and fluffy.
- Add Egg and Flavorings: Beat in egg, vanilla extract, and dissolved espresso until well combined.
- Incorporate Dry Ingredients: Gradually add the dry mixture to the wet mixture, mixing on low speed just until combined.
- Fold in Toffee: Fold in toffee bits gently.
- Chill the Dough: Cover and refrigerate for at least 2 hours, ideally overnight.
- Preheat Oven: Set oven to 375°F (190°C) and prepare baking sheets with parchment paper.
- Scoop and Bake: Scoop 1.5-inch balls onto prepared sheets, spaced 2 inches apart. Bake for 10-12 minutes until edges are golden and centers are soft.
- Finish with Salt: Sprinkle with flaked sea salt post-baking. Let cool on sheets for 5-10 minutes, then transfer to wire racks.
