Instructions

  1. Brown the Butter: In a light-colored saucepan, melt the unsalted butter over medium heat. Stir occasionally until the milk solids brown and a nutty aroma arises; this takes 5-7 minutes. Pour into a heat-proof bowl and let cool for 30-45 minutes.
  2. Combine the Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Prepare Espresso: Dissolve espresso powder in 1 teaspoon hot water.
  4. Mix Butter and Sugars: Beat cooled brown butter with brown sugar and granulated sugar for 2-3 minutes until light and fluffy.
  5. Add Egg and Flavorings: Beat in egg, vanilla extract, and dissolved espresso until well combined.
  6. Incorporate Dry Ingredients: Gradually add the dry mixture to the wet mixture, mixing on low speed just until combined.
  7. Fold in Toffee: Fold in toffee bits gently.
  8. Chill the Dough: Cover and refrigerate for at least 2 hours, ideally overnight.
  9. Preheat Oven: Set oven to 375°F (190°C) and prepare baking sheets with parchment paper.
