A quick and indulgent pasta dish featuring creamy Alfredo sauce and smoky Cajun sausage.

- 8 oz fettuccine pasta
- 2 tablespoons olive oil
- 1 lb smoked sausage, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the fettuccine. Bring a large pot of salted water to a boil and add the fettuccine. Cook according to package instructions until al dente, then reserve 1/2 cup of cooking water and drain the pasta.
- Brown the smoked sausage. Heat olive oil in a skillet and cook the sausage until browned on all sides, about 4–6 minutes.
- Sauté the garlic. Push sausage to the side, add garlic, and sauté for 30–60 seconds until fragrant.
- Add the cream and simmer. Pour in heavy cream, bring to a gentle simmer, and let it thicken slightly.
- Melt in Parmesan and seasoning. Stir in Parmesan and Cajun seasoning until smooth and glossy.
- Combine pasta and sauce. Add fettuccine to the skillet and toss to coat, adding reserved pasta water as needed.
- Season to taste. Adjust with salt and pepper.
- Serve hot and garnish with parsley and additional Parmesan if desired.
Notes
For a lighter sauce, consider using half-and-half. You can customize this dish by adding vegetables or swapping proteins.
