Description
Imagine biting into a buttery shortbread cookie, only to find it hugging a center of silky caramel. Now top it with glossy white chocolate and a flurry of holiday sprinkles, and you’ve got the ultimate Christmas cookie: Caramel White-Chocolate Shortbread Sandwiches.
Ingredients
40–50 buttery shortbread or scalloped butter cookies
1 cup thick caramel sauce or dulce de leche
1–2 tbsp heavy cream (optional, only if caramel is too thick)
8–10 oz white chocolate chips, white melting wafers, or vanilla almond bark
Holiday nonpareil sprinkles (red, green & white)
Instructions
1. Prep the Pan (≈ 2 minutes)
-
Line a large baking sheet with parchment paper.
2. Warm the Caramel (≈ 3 minutes)
-
If caramel is thick, microwave with 1 tbsp heavy cream for 10–15 seconds.
-
Stir until smooth, adding more cream only if needed.
3. Assemble the Cookie Sandwiches (≈ 5 minutes)
-
Lay half the cookies flat-side up.
-
Spread 1–2 teaspoons caramel in the center of each cookie, keeping it away from the edges.
-
Top with remaining cookies and press gently to seal.
4. Chill to Set (≈ 15–20 minutes)
-
Refrigerate cookie sandwiches so the caramel firms up.
5. Melt the White Chocolate (≈ 2–3 minutes)
-
Microwave white chocolate in 30-second intervals, stirring until glossy and smooth.
6. Top with Chocolate ✨ (≈ 6 minutes)
-
Spoon melted white chocolate only over the top of each cookie sandwich.
-
Let it drip naturally over the edges—do not fully dip.
7. Decorate 🎅🎨 (≈ 2 minutes)
-
While chocolate is still wet, sprinkle generously with holiday nonpareils.
8. Final Chill 🎁 (≈ 10–15 minutes)
-
Refrigerate until the white chocolate is fully set.
