Ingredients

🍐 Base Layers:

2 red beets, roasted and sliced

2 golden or chioggia beets, roasted and sliced

2 firm pears (Bosc or Anjou preferred), sliced into ½” rounds

1 tbsp olive oil, for brushing

Salt & cracked black pepper, to taste

β…“ cup crumbled feta cheese (“snow”)

ΒΌ cup toasted pecans, chopped

Fresh thyme sprigs, for garnish

πŸ‹ Citrus Honey Drizzle:

3 tbsp honey

Zest of 1 orange

1 tbsp fresh lemon juice


Instructions

Preheat oven to 200Β°C (400Β°F).

Roast whole beets (wrapped in foil) for 45–60 minutes until tender. Cool and peel.

Slice beets and pears into uniform rounds.

Lightly brush with olive oil, season with salt and pepper.

Layer beet and pear slices on each plate in a colorful tower.

In a small bowl, whisk honey, citrus zest, and juice until smooth.

Drizzle honey over each stack generously.

Sprinkle towers with feta and pecans.

Garnish with fresh thyme.

Serve warm or at room temp.
