Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup grated carrots
  • 1/2 cup cream cheese
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon powdered ginger
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 300°F (150°C) and line your baking sheets with parchment paper.
  2. Prepare the dry ingredients by combining almond flour, powdered sugar, cinnamon, and nutmeg in a mixing bowl.
  3. Whip the egg whites with cream of tartar until soft peaks form, then slowly add granulated sugar and whip until stiff peaks form.
  4. Combine the dry mixture with the whipped egg whites and gently fold until blended.
  5. Add the grated carrots and fold delicately to maintain volume.
  6. Pipe the batter into small circles on the baking sheets, leaving an inch of space between each.
  7. Rest the piped circles for 30-60 minutes until a skin forms on the surface.
  8. Bake in the preheated oven for 15-20 minutes until glossy and able to lift off the parchment once cooled.
  9. Make the frosting by beating together cream cheese and butter, then stir in vanilla, ginger, and powdered sugar until creamy.
  10. Assemble the macarons by piping frosting onto half of the shells and sandwiching them with the other half.
