- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup grated carrots
- 1/2 cup cream cheese
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon powdered ginger
- 1 cup powdered sugar (for frosting)
Instructions
- Preheat the oven to 300°F (150°C) and line your baking sheets with parchment paper.
- Prepare the dry ingredients by combining almond flour, powdered sugar, cinnamon, and nutmeg in a mixing bowl.
- Whip the egg whites with cream of tartar until soft peaks form, then slowly add granulated sugar and whip until stiff peaks form.
- Combine the dry mixture with the whipped egg whites and gently fold until blended.
- Add the grated carrots and fold delicately to maintain volume.
- Pipe the batter into small circles on the baking sheets, leaving an inch of space between each.
- Rest the piped circles for 30-60 minutes until a skin forms on the surface.
- Bake in the preheated oven for 15-20 minutes until glossy and able to lift off the parchment once cooled.
- Make the frosting by beating together cream cheese and butter, then stir in vanilla, ginger, and powdered sugar until creamy.
- Assemble the macarons by piping frosting onto half of the shells and sandwiching them with the other half.
