- 0.5 cup sour cream

- 1 cup crushed vanilla sandwich cookies
- 2 tablespoons unsalted butter, melted

- 2 to 3 teaspoons cherry soda
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan lined with parchment paper.
- Mix the dry ingredients by whisking flour, baking powder, baking soda, and salt in a medium bowl and set aside.
- Cream the softened butter and sugar in a large bowl with an electric mixer for about 3 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- Combine half of the dry mixture into the butter mixture, followed by cherry soda and sour cream, then gently fold in the remaining dry ingredients.
- Fold in the chopped maraschino cherries until evenly incorporated.
- Prepare the cookie crunch by mixing crushed cookies with melted butter.
- Layer half of the batter into the pan, sprinkle half of the cookie crunch, add the remaining batter, and top with the rest of the cookie mixture.
- Bake for 45 to 55 minutes until a toothpick comes out clean, covering with foil if browning too quickly.
- Cool in the pan for 10 minutes, then transfer to a wire rack. For the glaze, whisk powdered sugar with cherry soda and drizzle over the cooled cake.
Notes
For a unique twist, add nuts or almond extract. Avoid overmixing to keep the cake fluffy.
