Description

A delightful loaf cake that combines the playful tang of cherry soda with rich vanilla, finished with maraschino cherries and crunchy vanilla cookie bits.


Ingredients

  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda

  • 0.75 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup cherry soda
  • 0.5 cup sour cream
  • 0.5 cup chopped maraschino cherries, drained and patted dry
  • 1 cup crushed vanilla sandwich cookies
  • 2 tablespoons unsalted butter, melted
  • 0.5 cup powdered sugar
  • 2 to 3 teaspoons cherry soda

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan lined with parchment paper.
  2. Mix the dry ingredients by whisking flour, baking powder, baking soda, and salt in a medium bowl and set aside.
  3. Cream the softened butter and sugar in a large bowl with an electric mixer for about 3 minutes until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  5. Combine half of the dry mixture into the butter mixture, followed by cherry soda and sour cream, then gently fold in the remaining dry ingredients.
  6. Fold in the chopped maraschino cherries until evenly incorporated.
  7. Prepare the cookie crunch by mixing crushed cookies with melted butter.
  8. Layer half of the batter into the pan, sprinkle half of the cookie crunch, add the remaining batter, and top with the rest of the cookie mixture.
  9. Bake for 45 to 55 minutes until a toothpick comes out clean, covering with foil if browning too quickly.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack. For the glaze, whisk powdered sugar with cherry soda and drizzle over the cooled cake.

Notes

For a unique twist, add nuts or almond extract. Avoid overmixing to keep the cake fluffy.
