- 2 medium potatoes, diced
- 4 large eggs
- 1 cup cheddar cheese, shredded
- 1/2 cup cooked ham or bacon, optional
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
- Chopped green onions (for garnish, optional)
Instructions
- Heat the olive oil or butter in a large skillet over medium heat. Add the diced potatoes and cook until crispy and golden brown, about 10-15 minutes, stirring occasionally.
- While the potatoes are cooking, whisk the eggs in a bowl and season with salt and pepper.
- Once the potatoes are crispy, push them to one side of the skillet and pour the eggs into the other side. Cook the eggs undisturbed for a minute, then gently scramble until fully cooked.
- Sprinkle the shredded cheddar cheese and optional ham or bacon over the eggs. Stir until well mixed and let it cook for an additional 2 minutes for the cheese to melt.
- Serve immediately, garnished with chopped green onions if desired.
