Description

A comforting and quick breakfast dish combining crispy potatoes, creamy eggs, and melted cheddar cheese.

Ingredients

Scale
  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cooked ham or bacon, optional
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Chopped green onions (for garnish, optional)

Instructions

  1. Heat the olive oil or butter in a large skillet over medium heat. Add the diced potatoes and cook until crispy and golden brown, about 10-15 minutes, stirring occasionally.
  2. While the potatoes are cooking, whisk the eggs in a bowl and season with salt and pepper.
  3. Once the potatoes are crispy, push them to one side of the skillet and pour the eggs into the other side. Cook the eggs undisturbed for a minute, then gently scramble until fully cooked.
  4. Sprinkle the shredded cheddar cheese and optional ham or bacon over the eggs. Stir until well mixed and let it cook for an additional 2 minutes for the cheese to melt.
  5. Serve immediately, garnished with chopped green onions if desired.

Notes

Great served with toast or fresh fruit. You can customize with additional vegetables or leftovers for a personal touch.
