Description

Delightful cherry cobbler muffins with a soft texture and a crumbly topping, perfect for breakfast or as a sweet snack.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners.
  2. In a large bowl, whisk together 1 cup flour, 1/2 cup granulated sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt until blended.
  3. In another bowl, combine 1/2 cup buttermilk, 1/4 cup melted butter, 1 large egg, and 1 teaspoon vanilla extract. Mix until fully incorporated.
  4. Pour the wet ingredients into your dry mixture. Gently stir with a spatula until just combined, avoiding over-mixing to keep the muffins light and fluffy.
  5. Carefully fold in the 1 cup halved cherries, ensuring they are evenly distributed without mashing them.
  6. Divide the batter evenly among your muffin cups, filling each about three-quarters full for the perfect rise.
  7. In a small bowl, mix together 1/4 cup brown sugar, 1/4 cup oats, 1/4 cup flour, and 1/4 teaspoon cinnamon for the topping.
  8. Generously sprinkle this mixture over each muffin.
  9. Bake for 18-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  10. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.

Notes

For a different twist, add lemon zest or incorporate nuts like walnuts or pecans.
