Ingredients

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl until smooth, with a few lumps for texture.
  3. Cream together the softened butter and brown sugar until smooth and creamy.
  4. Add mashed bananas, vanilla extract, and egg to the butter-sugar mixture, mixing well.
  5. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. If using, gently fold in the chocolate chips.
  8. Drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are set and tops are lightly golden.
  10. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

Using very ripe bananas enhances sweetness. Don’t overmix to keep cookies tender.
