- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the ripe bananas in a large mixing bowl until smooth, with a few lumps for texture.
- Cream together the softened butter and brown sugar until smooth and creamy.
- Add mashed bananas, vanilla extract, and egg to the butter-sugar mixture, mixing well.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If using, gently fold in the chocolate chips.
- Drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set and tops are lightly golden.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
Notes
Using very ripe bananas enhances sweetness. Don’t overmix to keep cookies tender.
