A comforting and gourmet Chicken Avocado Melt Sandwich combining juicy chicken, creamy avocado, and melted cheese for an explosion of flavors.

- 2 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling the sandwiches
Instructions
- Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for about 6–7 minutes per side until it’s cooked through. Remove and let it rest before slicing thinly.
- Slice the avocado and prepare your choice of cheese.
- Spread mayonnaise and Dijon mustard generously on one side of each slice of bread.
- On two slices of the prepared bread, layer the sliced chicken, avocado, cheese, red onion, and tomato. Top with the remaining bread slices, mayo-side down.
- In the same skillet, heat butter or olive oil. Place the assembled sandwiches in the skillet and cook for 3–4 minutes per side until golden and cheese has melted.
- Remove sandwiches from the skillet, let cool slightly, then slice in half and serve warm.
Notes
For a crispy finish, consider grilling the sandwiches with a sprinkle of parmesan on the outside. Customize with jalapeños or fresh basil for added flavor.
