Description

A comforting and gourmet Chicken Avocado Melt Sandwich combining juicy chicken, creamy avocado, and melted cheese for an explosion of flavors.


Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for about 6–7 minutes per side until it’s cooked through. Remove and let it rest before slicing thinly.
  2. Slice the avocado and prepare your choice of cheese.
  3. Spread mayonnaise and Dijon mustard generously on one side of each slice of bread.
  4. On two slices of the prepared bread, layer the sliced chicken, avocado, cheese, red onion, and tomato. Top with the remaining bread slices, mayo-side down.
  5. In the same skillet, heat butter or olive oil. Place the assembled sandwiches in the skillet and cook for 3–4 minutes per side until golden and cheese has melted.
  6. Remove sandwiches from the skillet, let cool slightly, then slice in half and serve warm.

Notes

For a crispy finish, consider grilling the sandwiches with a sprinkle of parmesan on the outside. Customize with jalapeños or fresh basil for added flavor.
