A delicious and easy recipe to make Chicken Quesadillas similar to Taco Bell’s, with a crispy texture and flavorful filling.

- 6–8 medium-sized flour tortillas
- 1 whole rotisserie chicken, pulled apart
- 3 tbsp diced pickled jalapeños
- 1 tbsp juice from pickled jalapeños
- 1 cup shredded cheddar cheese
- 1 cup mayo
- Salt, as needed
- Pepper, as needed
- 1 tsp ground cumin
- 1 tsp ground chili powder
- 1 tsp cayenne pepper powder
Instructions
- Toss the chicken, mayo, shredded cheese, diced jalapeños, and jalapeño brine into a big bowl. Sprinkle in cumin, chili powder, cayenne, salt, and pepper. Stir it all together until everything’s coated evenly.
- Spread the chicken mix evenly across a tortilla. If you’d like, sprinkle more cheese on top before layering another tortilla to close it.
- Heat a skillet with a little oil or nonstick spray over medium-high heat. Cook each quesadilla on both sides until crispy and golden.
- Move the quesadillas to a cutting board. Slice into wedges and enjoy with sour cream mixed with salsa or Taco Bell Quesadilla Sauce.
