Ingredients
- Boneless chicken breast or thighs
- Avocado
- Refried beans
- Pickled jalapeños
- Queso fresco or Monterey Jack cheese
- Telera bread or bolillo bread
Instructions
- Grill the chicken after marinating in spices over medium heat for 5-7 minutes on each side until cooked through and slice thinly.
- Toast the telera or bolillo bread until golden brown.
- Spread a layer of refried beans on the bottom half of the toasted bread.
- Layer the sliced grilled chicken on top of the beans.
- Add slices of avocado and sprinkle pickled jalapeños over the chicken.
- Sprinkle cheese over the top and cap with the other half of the bread. Slice and serve immediately.
