Description

A delightful dish combining spicy chipotle honey chicken thighs with creamy smoked gouda mashed potatoes, perfect for any occasion.


Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons chipotle sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 large russet potatoes
  • 1/2 cup milk
  • 4 ounces smoked gouda cheese
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, whisk together chipotle sauce, honey, garlic powder, smoked paprika, salt, and pepper.
  3. Coat each chicken thigh with the marinade and place them skin-side up in a baking dish.
  4. Bake for 25-30 minutes until the thighs are cooked through and reach an internal temperature of 165°F.
  5. While the chicken bakes, peel and chop the potatoes and boil them in salted water until tender, about 15 minutes.
  6. Drain the potatoes and return them to the pot. Add milk, smoked gouda, and butter, then mash until creamy.
  7. Serve the chicken thighs alongside the smoked gouda mashed potatoes.

Notes

For extra creaminess in the mashed potatoes, consider adding a splash more of milk or cream during mashing.
