- 4 chicken thighs (bone-in, skin-on)
- 2 tablespoons chipotle sauce
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 large russet potatoes
- 1/2 cup milk
- 4 ounces smoked gouda cheese
- 2 tablespoons butter
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, whisk together chipotle sauce, honey, garlic powder, smoked paprika, salt, and pepper.
- Coat each chicken thigh with the marinade and place them skin-side up in a baking dish.
- Bake for 25-30 minutes until the thighs are cooked through and reach an internal temperature of 165°F.
- While the chicken bakes, peel and chop the potatoes and boil them in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Add milk, smoked gouda, and butter, then mash until creamy.
- Serve the chicken thighs alongside the smoked gouda mashed potatoes.
Notes
For extra creaminess in the mashed potatoes, consider adding a splash more of milk or cream during mashing.
