- 4 chicken thighs
- 2 tablespoons chipotle honey sauce
- Salt and pepper to taste
- 2 cups potatoes, peeled and chopped
- 1/2 cup milk
- 1/4 cup smoked Gouda cheese, shredded
- 2 tablespoons butter
Instructions
- Preheat your oven to 375°F (190°C). Season the chicken thighs with salt and pepper, then brush with chipotle honey sauce.
- Place the seasoned chicken in a baking dish and bake for 25-30 minutes until golden-brown and internal temperature reaches 165°F (75°C).
- Bring a pot of salted water to boil. Add potatoes and cook until tender, about 15-20 minutes. Drain and return to pot.
- Pour in milk, add shredded smoked Gouda and butter, then mash until creamy and smooth.
- Serve the chicken with mashed potatoes and drizzle with any leftover chipotle honey sauce.
Notes
Let chicken thighs come to room temperature before cooking for even results. Adjust the seasoning in the mashed potatoes to taste.
