- 4 chicken thighs
- 1/4 cup chipotle honey sauce
- Salt and pepper to taste
- 2 cups potatoes, peeled and cubed
- 1/2 cup smoked Gouda cheese, shredded
- 1/4 cup milk
- 2 tablespoons butter
Instructions
- Preheat your oven to 400°F (200°C).
- Marinate the chicken thighs in the chipotle honey sauce for at least 30 minutes.
- Place the marinated thighs on a baking sheet and season with salt and pepper. Bake for about 25-30 minutes until cooked through.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes, return to the pot, and add smoked Gouda cheese, milk, and butter. Mash until creamy.
- Serve the baked chicken thighs over the smoked Gouda mashed potatoes.
Notes
Adjust the spice level of the marinade to suit your taste. Experiment with different cheeses in the mashed potatoes for variety.
