Description
Delicious chocolate-dipped cookies with a crunchy Rice Krispies and caramel base, topped with gold sprinkles.
Ingredients

- 4 cups Rice Krispies cereal
- 1 ½ cups chewy caramel bits or soft caramels, unwrapped
- 3 tbsp unsalted butter
- 2 tbsp heavy cream or milk
- 1 cup semisweet chocolate chips
- 1 tbsp coconut oil (optional)
- Gold sprinkles or edible glitter
Instructions
- In a saucepan over medium heat, melt the caramel bits, butter, and heavy cream until smooth and glossy. (4–5 minutes)
- Remove from heat and stir in the Rice Krispies until evenly coated. (1 minute)
- Scoop the warm mixture onto parchment paper and press into star shapes using your hands or a cookie cutter. (5 minutes)
- Let them cool and firm. (10 minutes)
- Melt the chocolate chips (and coconut oil if using) in the microwave in 20–30 second intervals until smooth. (1 minute)
- Dip each caramel star halfway into the melted chocolate or spoon chocolate over the top. (3 minutes)
- While the chocolate is still wet, add gold sprinkles or glitter. (30 seconds)
- Allow cookies to set at room temperature or chill briefly. (20 minutes)
Notes
- Ensure the caramel is completely melted before adding the Rice Krispies for a smooth coating.
- Use a cookie cutter for uniform star shapes.
- Experiment with different types of edible glitter for variety.
