Description

Ingredients

  • 1/2 cup (115g) unsalted butter
  • 4 oz (115g) semi-sweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (30g) all-purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • Powdered sugar (for dusting)
  • Vanilla ice cream or whipped cream (for serving)
  • Fresh berries (strawberries, raspberries)

Instructions

  1. Preheat your oven to 425°F (220°C). Butter and flour the ramekins.
  2. In a double boiler, melt chocolate and butter until smooth. Remove from heat and let cool slightly.
  3. Whisk together eggs, egg yolks, and sugar until pale and fluffy.
  4. Mix the melted chocolate into the egg mixture, whisking continuously.
  5. Fold in flour, vanilla, and salt gently.
  6. Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
  7. Bake for 12-14 minutes until edges are set but centers are soft.
  8. Let cool for 1 minute, then invert onto plates and dust with powdered sugar. Serve warm with ice cream and berries.

Notes

Make the batter in advance and store it in the refrigerator for up to 24 hours. Bake straight from the fridge without adjusting the baking time.
