A festive and delicious Christmas treat that combines the tartness of cranberry with a moist, fluffy cake and a whipped cream topping.

- 1 ¾ cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 3 large eggs
- 1 cup whole milk (or buttermilk)
- 1 cup cranberry sauce (homemade or canned)
- 1 cup whipped cream (sweetened to taste)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine eggs and milk. Slowly add to dry ingredients, mixing until just combined.
- Bake for 25-30 minutes until golden brown. Remove from oven and poke holes all over the surface using the handle of a wooden spoon.
- Pour cranberry sauce over the warm cake, allowing it to seep into the holes.
- Let cool completely before spreading whipped cream on top. Decorate as desired.
Notes
- For a sweeter cake, adjust the amount of sugar in the whipped cream.
- Homemade cranberry sauce can enhance the flavor.
- This cake can be made a day in advance and kept refrigerated.
