Description

A festive and delicious Christmas treat that combines the tartness of cranberry with a moist, fluffy cake and a whipped cream topping.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup whole milk (or buttermilk)
  • 1 cup cranberry sauce (homemade or canned)
  • 1 cup whipped cream (sweetened to taste)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine eggs and milk. Slowly add to dry ingredients, mixing until just combined.
  4. Bake for 25-30 minutes until golden brown. Remove from oven and poke holes all over the surface using the handle of a wooden spoon.
  5. Pour cranberry sauce over the warm cake, allowing it to seep into the holes.
  6. Let cool completely before spreading whipped cream on top. Decorate as desired.
