Description

These Christmas Sugar Cookie Bars are soft, buttery, and topped with festive frosting and sprinkles. They’re a quick and easy way to make a holiday favorite without the hassle of rolling and cutting cookies!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 3 tablespoons milk (add more for desired consistency)
  • 1 teaspoon vanilla extract (for frosting)
  • Food coloring (optional)
  • Holiday sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang for easy removal.
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and powdered sugar until light and fluffy. Beat in the eggs, vanilla extract, and almond extract (if using) until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  4. Press the dough evenly into the prepared baking dish. Bake for 18-20 minutes, or until the edges are lightly golden. Allow the cookie base to cool completely before frosting.
  5. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the milk, until the frosting reaches a smooth, spreadable consistency. Stir in the vanilla extract and food coloring if desired.
  6. Spread the frosting evenly over the cooled cookie base. Add holiday sprinkles for a festive touch.
  7. Use the parchment paper to lift the cookie slab out of the pan. Slice into bars or squares and serve.
