Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar (for frosting)
- 3 tablespoons milk (add more for desired consistency)
- 1 teaspoon vanilla extract (for frosting)
- Food coloring (optional)
- Holiday sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang for easy removal.
- In a large mixing bowl, cream the softened butter, granulated sugar, and powdered sugar until light and fluffy. Beat in the eggs, vanilla extract, and almond extract (if using) until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Press the dough evenly into the prepared baking dish. Bake for 18-20 minutes, or until the edges are lightly golden. Allow the cookie base to cool completely before frosting.
- In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the milk, until the frosting reaches a smooth, spreadable consistency. Stir in the vanilla extract and food coloring if desired.
- Spread the frosting evenly over the cooled cookie base. Add holiday sprinkles for a festive touch.
- Use the parchment paper to lift the cookie slab out of the pan. Slice into bars or squares and serve.
Notes
- Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
