- 1 ½ cups rolled oats
- 1 cup vanilla protein powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 2 eggs
- 1 cup plain Greek yogurt
- ½ cup honey or maple syrup
- 1 cup milk
- 2 tablespoons melted coconut oil or butter
- 2 tablespoons brown sugar
- 1 tablespoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- Combine the rolled oats, protein powder, baking powder, baking soda, and ground cinnamon in a large mixing bowl.
- Whisk the eggs, Greek yogurt, honey or maple syrup, and milk in a medium bowl until smooth.
- Pour the wet mixture into the dry ingredients and gently fold them together, avoiding overmixing.
- Mix melted coconut oil or butter with brown sugar and cinnamon in a small bowl, then fold spoonfuls into the batter.
- Divide the batter evenly among muffin cups, filling each about ¾ full.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
Great for meal prepping; they freeze well for up to 3 months.
