- 1 cup dates, pitted and chopped
- 1 cup water
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup heavy cream (for toffee sauce)
- 1 cup brown sugar (for toffee sauce)
- 1/2 cup unsalted butter (for toffee sauce)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a medium-sized baking dish.
- Combine the chopped dates and water in a small pot. Bring to a boil, then remove from heat. Stir in the baking soda and let cool.
- Cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs and vanilla extract.
- Whisk together the flour, baking powder, and salt. Gradually add to the butter-sugar mixture, alternating with the cooled date mixture.
- Pour the batter into the prepared baking dish.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- For the toffee sauce, combine brown sugar and butter in a saucepan over medium heat until melted. Add heavy cream and simmer until thickened.
- Serve the pudding warm, drizzled with toffee sauce.
Notes
This pudding can be made a day in advance and reheated. Try serving with vanilla ice cream or whipped cream for a delightful contrast.
