Description

A deliciously moist dessert made with dates and drenched in a warm toffee sauce, offering comfort in every bite.


Ingredients

  • 1 cup dates, pitted and chopped
  • 1 cup water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup heavy cream (for toffee sauce)
  • 1 cup brown sugar (for toffee sauce)
  • 1/2 cup unsalted butter (for toffee sauce)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a medium-sized baking dish.
  2. Combine the chopped dates and water in a small pot. Bring to a boil, then remove from heat. Stir in the baking soda and let cool.
  3. Cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs and vanilla extract.
  4. Whisk together the flour, baking powder, and salt. Gradually add to the butter-sugar mixture, alternating with the cooled date mixture.
  5. Pour the batter into the prepared baking dish.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. For the toffee sauce, combine brown sugar and butter in a saucepan over medium heat until melted. Add heavy cream and simmer until thickened.
  8. Serve the pudding warm, drizzled with toffee sauce.

Notes

This pudding can be made a day in advance and reheated. Try serving with vanilla ice cream or whipped cream for a delightful contrast.
