- Mix Your Batter: In a large mixing bowl, whisk together the cottage cheese and eggs until thoroughly combined. Add the flour, sugar, baking powder, salt, and vanilla extract, and mix until just combined.
- Heat Your Skillet: Preheat a non-stick skillet or griddle over medium heat, lightly greasing it with butter or oil.
- Cook the Pancakes: Spoon ¼ cup portions of the batter onto the skillet. Cook each pancake for about 2 to 3 minutes until bubbles form, then flip and cook for another 1 to 2 minutes until golden brown.
- Serve Warm: Stack the pancakes on plates and spoon the fresh strawberry syrup over the top.
