Description

Ingredients

  • 1/2 lb cooked crab meat, shredded
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup queso dip (mild or spicy)
  • 1 tbsp fresh cilantro, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 8 small flour tortillas
  • 2 tbsp butter or oil (for frying)

Instructions

  1. Mix the filling: In a large mixing bowl, combine the chopped shrimp, shredded crab meat, Monterey Jack cheese, softened cream cheese, queso dip, chopped cilantro, garlic powder, and smoked paprika. Stir until the mixture is creamy and well combined.
  2. Assemble the quesadillas: Lay out your tortillas on a clean surface. Place 2-3 tablespoons of the filling onto the center of each tortilla. Roll them tightly, securing them with toothpicks to maintain their shape.
  3. Fry to perfection: Heat butter or oil in a non-stick skillet over medium heat. Add the quesadillas, cooking until they are golden brown and crispy on both sides. Flip carefully using a spatula to avoid any messy spills!
  4. Finish and serve: Once done, remove the toothpicks. Plate the crispy quesadillas, drizzle warm queso sauce over the top, and sprinkle with fresh cilantro. Serve immediately while the cheese oozes deliciously!
