- For topping:
- ½ cup roughly chopped dried cranberries, loosely packed (2.3oz, 65g)
- ⅔ cup melted white chocolate (4oz, 113g)
Instructions
- Adjust oven rack to middle position and heat oven to 350 degrees F.
- Spray a 9 by 13-inch baking pan with nonstick baking spray, line with parchment paper, and spray again.
- In a light-colored saucepan, melt butter over medium heat. Once browned, transfer to a bowl to cool.
- In a medium bowl, combine flour, baking powder, and salt.
- In another medium bowl, combine the cooled melted butter with brown sugar. Then add eggs, vanilla, and orange zest, mixing well.
- Fold the dry ingredients into the wet mixture until just combined, then fold in chocolate and cranberries.
- Turn the batter into the prepared pan and smooth the top. Bake until edges are golden brown, about 18 to 22 minutes. Cool on a wire rack to room temperature.
- For the frosting, mix all frosting ingredients until fluffy and spread on cooled bars.
- Sprinkle cranberries on top and drizzle melted white chocolate over them.
- Refrigerate until frosting is firm, then lift out of the pan and cut into triangles.
- Store in an airtight container in the refrigerator for up to 5 days.
Notes
- Use light-colored cookware to monitor the browning of the butter.
- The overhang of parchment paper helps in lifting the bars out of the pan.
