- 1 cup fresh or frozen cranberries
- 1/2 cup sugar
- 1/4 cup orange juice
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan, combine cranberries, sugar, orange juice, soy sauce, and Dijon mustard. Cook over medium heat until the cranberries burst and the mixture thickens, stirring occasionally.
- Season the salmon fillets with salt and pepper.
- Arrange the salmon on a baking sheet and brush with olive oil.
- Pour the cranberry sauce over the salmon, making sure it’s well coated.
- Bake in preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
- Serve hot, garnished with additional cranberries if desired.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
