Ingredients

  • 4 chicken breasts
  • 1 cup fresh spinach, chopped
  • ½ cup dried cranberries
  • 4 oz Brie cheese, sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme (or rosemary)
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional glaze: 2 tbsp honey + 1 tbsp Dijon mustard

Instructions

  1. Prep the Chicken (≈ 5 minutes): Preheat oven to 375°F (190°C). Pat chicken breasts dry. Using a sharp knife, cut a deep pocket into the thickest part of each breast—don’t cut all the way through.
  2. Make the Filling (≈ 2 minutes): In a small bowl, combine chopped spinach and dried cranberries. Toss lightly to mix.
  3. Stuff the Chicken (≈ 3 minutes): Place 2–3 slices of Brie inside each chicken pocket. Add a generous handful of cranberry-spinach mixture. Press to close—secure with toothpicks if needed.
  4. Season the Outside: Rub each stuffed chicken breast with olive oil, garlic powder, thyme or rosemary, salt & pepper.
  5. Sear for Flavor (Optional but recommended): Heat a skillet over medium-high heat. Sear the chicken 2 minutes per side to create a golden crust.
  6. Bake to Perfection (≈ 20–25 minutes): Transfer to a baking dish and cook until chicken reaches 165°F internal temperature.
  7. Optional Honey-Dijon Glaze: Brush chicken with a mixture of 2 tbsp honey and 1 tbsp Dijon mustard. Return to oven for 3–5 minutes for a glossy finish.
  8. Serve & Enjoy: Slice and serve with roasted veggies, wild rice, mashed potatoes, or a festive salad.

  • Make sure not to cut through the chicken completely when creating the pocket.
