Description

A creamy and indulgent casserole filled with shredded chicken, cheddar cheese, and crispy bacon, perfect for weeknight dinners or potlucks.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup ranch dressing
  • 1 cup cooked bacon, crumbled
  • 1 cup frozen mixed vegetables (optional)
  • Salt and pepper to taste
  • 1 cup cooked rice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and position the rack in the center.
  2. Crisp bacon in a skillet or bake on a sheet at 400°F for 15–20 minutes; drain and crumble.
  3. Beat the softened cream cheese with the ranch dressing until smooth.
  4. Add the shredded chicken and cheddar to the bowl and fold gently until coated.
  5. Fold in the crumbled bacon and frozen mixed vegetables (if using). Season with salt and pepper.
  6. If using rice, spread a layer of cooked rice in the greased casserole dish.
  7. Spread the chicken mixture over the rice or directly into the greased dish.
  8. Bake for 25–30 minutes until heated through and bubbly.
  9. Let cool for 5–10 minutes before serving.

Notes

For a quick meal, use rotisserie chicken. Can be made ahead and refrigerated or frozen for later.
