Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups cooked rice
  • 1 cup broccoli florets, steamed
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Cook the chicken pieces with salt and pepper for about 6-8 minutes until golden brown.
  3. Sauté the minced garlic in the same skillet for about 1 minute.
  4. Add the chicken broth, scraping the skillet, and simmer for 2-3 minutes.
  5. Create the cream sauce by stirring in heavy cream and Parmesan cheese for 3-4 minutes.
  6. Add Italian seasoning and return the cooked chicken to the skillet, cooking for an additional 2-3 minutes.
  7. Assemble the bowls with rice, creamy chicken, and steamed broccoli, garnished with parsley.
