Description

Indulge in tender potatoes enveloped in a luxurious garlic cream sauce for a comforting and elegant dish.

Ingredients

Scale
  • 2 lbs (900g) potatoes, peeled and diced
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Prepare the potatoes: Begin by peeling and dicing the potatoes into uniform cubes for even cooking.
  2. Boil the potatoes: In a large pot, add the diced potatoes and cover them with cold water. Bring the pot to a boil over medium-high heat.
  3. Cook until tender: Boil the potatoes for about 15-20 minutes, or until they are tender and easily pierced with a fork. Drain and set aside.
  4. Start the sauce: In a separate saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  5. Create the creamy base: Gradually whisk the heavy cream and milk into the garlic butter, stirring constantly until the mixture is smooth and begins to thicken slightly.
  6. Add flavor: Stir in the grated Parmesan cheese, salt, and black pepper. Continue to cook for another 2-3 minutes until the cheese melts and the sauce is creamy.
  7. Combine: Add the cooked potatoes to the saucepan, gently stirring to coat them thoroughly with the creamy garlic sauce. Cook for an additional 3-5 minutes until the potatoes are heated through.
  8. Serve: Transfer the creamy garlic potatoes to a serving dish. Garnish with chopped fresh parsley if desired, and enjoy!

Notes

Make-ahead tips: Prepare the creamy garlic sauce in advance and store it in the fridge for up to three days. Rewarm gently before adding freshly boiled potatoes.
