Ingredients
For the Meatballs:
1 lb ground chicken
2 cloves garlic, minced
1/4 cup fresh parsley, finely chopped
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
For the Creamy Mushroom Sauce:
2 tablespoons olive oil
8 oz mushrooms, sliced
1/2 cup heavy cream
Extra salt & pepper to taste
Instructions
1️⃣ Prepare the Meatball Mixture
In a large bowl, combine:

Mix gently until just combined. Avoid overmixing to keep the meatballs tender.
2️⃣ Form the Meatballs
Shape the mixture into evenly sized meatballs (about 1–1.5 inches wide). You should get around 16–20 meatballs.
3️⃣ Brown the Meatballs
Heat olive oil in a large skillet over medium heat.
Add the meatballs in a single layer (work in batches if needed). Cook for 6–8 minutes, turning occasionally, until browned on all sides and mostly cooked through. Remove from the skillet and set aside.
4️⃣ Cook the Mushrooms
In the same skillet, add the sliced mushrooms.
Cook for about 5–7 minutes until softened and lightly golden. Season with a small pinch of salt and pepper.
5️⃣ Make It Creamy
Reduce heat to low and pour in the heavy cream. Stir gently, allowing it to simmer for 2–3 minutes until slightly thickened.
Return the meatballs to the skillet and let everything simmer together for another 5–7 minutes, until the meatballs are fully cooked and coated in the creamy mushroom sauce.
