Description

A creamy, flavorful dish combining tender chicken, sun-dried tomatoes, and fresh spinach over rice, inspired by Tuscan cuisine.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1 cup long-grain white rice, rinsed
  • 2 1/2 cups low-sodium chicken broth
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, drained and sliced
  • 2 cups fresh baby spinach, packed
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp unsalted butter
  • Fresh basil leaves, torn
  • Additional Parmesan cheese for serving

Instructions

  1. Season the chicken: Begin by seasoning your chicken pieces generously with salt, pepper, and Italian seasoning.
  2. Heat the skillet: In a large deep skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook until golden and cooked through, about 5 to 6 minutes.
  3. Transfer the cooked chicken to a plate and set aside.
  4. Sauté the aromatics: To the same skillet, add butter and allow it to melt. Toss in the chopped onion and sauté for 2 to 3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds.
  5. Stir in the sun-dried tomatoes and rice, toasting for a minute.
  6. Add in the broth: Pour in the chicken broth and bring to a gentle simmer. Cover and cook for 15 minutes until the rice is tender.
  7. Return the chicken to the skillet along with any accumulated juices. Stir in the heavy cream and Parmesan cheese.
  8. Toss in the fresh baby spinach and cook until wilted, about 1 minute.
  9. Serve: Dish out portions, garnished with fresh basil and additional Parmesan cheese.

Notes

Make-ahead tips: Prepare chicken and chop vegetables a day in advance. Store separately in the refrigerator.
