- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- 1 cup long-grain white rice, rinsed
- 2 1/2 cups low-sodium chicken broth
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes packed in oil, drained and sliced
- 2 cups fresh baby spinach, packed
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 tbsp unsalted butter
- Fresh basil leaves, torn
- Additional Parmesan cheese for serving
Instructions
- Season the chicken: Begin by seasoning your chicken pieces generously with salt, pepper, and Italian seasoning.
- Heat the skillet: In a large deep skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and cook until golden and cooked through, about 5 to 6 minutes.
- Transfer the cooked chicken to a plate and set aside.
- Sauté the aromatics: To the same skillet, add butter and allow it to melt. Toss in the chopped onion and sauté for 2 to 3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds.
- Stir in the sun-dried tomatoes and rice, toasting for a minute.
- Add in the broth: Pour in the chicken broth and bring to a gentle simmer. Cover and cook for 15 minutes until the rice is tender.
- Return the chicken to the skillet along with any accumulated juices. Stir in the heavy cream and Parmesan cheese.
- Toss in the fresh baby spinach and cook until wilted, about 1 minute.
- Serve: Dish out portions, garnished with fresh basil and additional Parmesan cheese.
Notes
Make-ahead tips: Prepare chicken and chop vegetables a day in advance. Store separately in the refrigerator.
