- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 large egg
- 1 tablespoon olive oil
Instructions
- Pat the cod fillets dry with paper towels to remove excess moisture.
- Combine the grated Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper in a bowl, mixing until evenly combined.
- Whisk the egg in another bowl until just combined.
- Dip each cod fillet into the egg, allowing excess to drip off, then coat with the breadcrumb mixture, pressing gently to adhere.
- Preheat your air fryer to 400°F (200°C).
- Spray the air fryer basket lightly with cooking spray and place the coated fillets inside, avoiding overcrowding.
- Cook for 10-12 minutes, flipping halfway through.
- Let the cod rest for a couple of minutes before serving.
Notes
Make-ahead: Coat the fillets and refrigerate for up to an hour before cooking. If you don’t have an air fryer, bake in a preheated oven at 425°F (220°C) for 15-20 minutes.
