Description

Ingredients

  • 2 cod fillets (about 6 ounces each)
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 large egg
  • 1 tablespoon olive oil

Instructions

  1. Pat the cod fillets dry with paper towels to remove excess moisture.
  2. Combine the grated Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper in a bowl, mixing until evenly combined.
  3. Whisk the egg in another bowl until just combined.
  4. Dip each cod fillet into the egg, allowing excess to drip off, then coat with the breadcrumb mixture, pressing gently to adhere.
  5. Preheat your air fryer to 400°F (200°C).
  6. Spray the air fryer basket lightly with cooking spray and place the coated fillets inside, avoiding overcrowding.
  7. Cook for 10-12 minutes, flipping halfway through.
  8. Let the cod rest for a couple of minutes before serving.

Notes

Make-ahead: Coat the fillets and refrigerate for up to an hour before cooking. If you don’t have an air fryer, bake in a preheated oven at 425°F (220°C) for 15-20 minutes.
