Delightful and crispy baked cauliflower bites served with a creamy garlic sauce.


Ingredients

  • 1 head cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley (optional, for garnish)
  • 1/2 cup Greek yogurt or sour cream
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped dill or parsley (for sauce)
  • Salt and pepper to taste (for sauce)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash the cauliflower and cut it into bite-sized florets.
  3. Toss the cauliflower florets with olive oil, paprika, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  4. Arrange the seasoned florets evenly on the baking sheet, spacing them well.
  5. Bake in the oven for 25-30 minutes, flipping halfway through.
  6. Combine Greek yogurt or sour cream, minced garlic, lemon juice, and chopped herbs in a small bowl for the garlic sauce. Add salt and pepper to taste.
  7. Chill the garlic sauce until the cauliflower is ready to serve.
  8. Transfer the crispy cauliflower bites to a serving platter and garnish with parsley.

Make-ahead tips: Prep the cauliflower and season it the night before. Store in an airtight container in the fridge.
