- 1 head cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped parsley (optional, for garnish)
- 1/2 cup Greek yogurt or sour cream
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped dill or parsley (for sauce)
- Salt and pepper to taste (for sauce)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash the cauliflower and cut it into bite-sized florets.
- Toss the cauliflower florets with olive oil, paprika, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
- Arrange the seasoned florets evenly on the baking sheet, spacing them well.
- Bake in the oven for 25-30 minutes, flipping halfway through.
- Combine Greek yogurt or sour cream, minced garlic, lemon juice, and chopped herbs in a small bowl for the garlic sauce. Add salt and pepper to taste.
- Chill the garlic sauce until the cauliflower is ready to serve.
- Transfer the crispy cauliflower bites to a serving platter and garnish with parsley.
Notes
Make-ahead tips: Prep the cauliflower and season it the night before. Store in an airtight container in the fridge.
