- 2 large eggs, beaten

Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Set up your dredging station: In one bowl, add the flour. In a second bowl, beat the eggs. In a third bowl, mix panko breadcrumbs with garlic powder, smoked paprika, salt, and black pepper.
- Dredge the chicken: Coat each chicken thigh with flour, dip in beaten eggs, then roll in the panko mixture.
- Fry the chicken thighs in olive oil over medium-high heat for 2 to 3 minutes on each side until golden brown.
- Transfer the browned chicken to the baking sheet and bake for 15 to 18 minutes until cooked through. Rest for 5 minutes before slicing.
- Crisp the bacon in a separate skillet over medium heat until crispy. Drain on paper towels.
- Toss the romaine with Caesar dressing in a large mixing bowl.
- Warm the tortillas briefly in a dry pan or microwave.
- Assemble each tortilla with romaine, sliced chicken, bacon, and Parmesan. Roll tightly and slice in half.
- Serve with fresh lemon wedges.
