  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs

  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying
  • 8 slices bacon
  • 2 cups romaine lettuce, chopped

  • 4 large flour tortillas
  • 1/4 cup grated Parmesan cheese
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up your dredging station: In one bowl, add the flour. In a second bowl, beat the eggs. In a third bowl, mix panko breadcrumbs with garlic powder, smoked paprika, salt, and black pepper.
  3. Dredge the chicken: Coat each chicken thigh with flour, dip in beaten eggs, then roll in the panko mixture.
  4. Fry the chicken thighs in olive oil over medium-high heat for 2 to 3 minutes on each side until golden brown.
  5. Transfer the browned chicken to the baking sheet and bake for 15 to 18 minutes until cooked through. Rest for 5 minutes before slicing.
  6. Crisp the bacon in a separate skillet over medium heat until crispy. Drain on paper towels.
  7. Toss the romaine with Caesar dressing in a large mixing bowl.
  8. Warm the tortillas briefly in a dry pan or microwave.
  9. Assemble each tortilla with romaine, sliced chicken, bacon, and Parmesan. Roll tightly and slice in half.
  10. Serve with fresh lemon wedges.
