Ingredients

  • 2 slices crusty bread, toasted

Instructions

  1. In a nonstick skillet, heat the olive oil over medium heat until it shimmers, about 1 minute.
  2. Sprinkle the crumbled feta into two small mounds in the pan, shaping them into nests roughly the size of fried eggs.
  3. Let the feta sizzle for 1 to 2 minutes until the edges are golden brown and crispy.
  4. Gently crack one egg into the center of each feta nest, ensuring the yolks stay intact.
  5. Cover with a lid and cook for 3 to 4 minutes until the egg whites are set but yolks are still runny.
  6. Season with black pepper and red pepper flakes, then transfer to serving plates over toasted bread and garnish with fresh herbs.
