Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the potatoes by washing and peeling them, then cut into even chunks (1 to 2 inches).
- Parboil the chopped potatoes in a large pot of salted water for about 5-7 minutes until tender but not fully cooked.
- Drain the potatoes in a colander and let them sit for a few minutes to allow steam to escape.
- Shake the colander gently to create rough edges on the potatoes.
- Drizzle the potatoes with olive oil, sprinkle with salt, herbs, and spices, then toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 30-40 minutes, turning halfway through until golden brown and crispy.
- Serve immediately, garnished with fresh herbs and Parmesan if desired.
Notes
Make-ahead by parboiling the potatoes earlier in the day. Use an air fryer if desired for a healthier version.
