Description

Ingredients

  • 4 large Russet or Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Fresh parsley or chives (optional, for garnish)
  • Parmesan cheese (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the potatoes by washing and peeling them, then cut into even chunks (1 to 2 inches).
  3. Parboil the chopped potatoes in a large pot of salted water for about 5-7 minutes until tender but not fully cooked.
  4. Drain the potatoes in a colander and let them sit for a few minutes to allow steam to escape.
  5. Shake the colander gently to create rough edges on the potatoes.
  6. Drizzle the potatoes with olive oil, sprinkle with salt, herbs, and spices, then toss to coat evenly.
  7. Spread the potatoes in a single layer on a baking sheet.
  8. Roast in the preheated oven for 30-40 minutes, turning halfway through until golden brown and crispy.
  9. Serve immediately, garnished with fresh herbs and Parmesan if desired.

Notes

Make-ahead by parboiling the potatoes earlier in the day. Use an air fryer if desired for a healthier version.
