Hearty and nutritious patties made from sweet potatoes and red lentils, perfect for a healthy meal or snack.
Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
Instructions
- Cook the lentils: Rinse 1 cup of red lentils under cold water. In a medium pot, add rinsed lentils and cover with water. Boil, then simmer for about 15 minutes until tender. Drain excess water and set aside.
- Prepare sweet potatoes: Boil peeled and cubed sweet potatoes in a separate pot until fork-tender (about 15-20 minutes). Drain and mash in a bowl.
- In a skillet, heat 1 tablespoon olive oil over medium heat. Sauté chopped onion for 5 minutes until translucent, then add minced garlic and cook for another minute.
- In a large mixing bowl, combine mashed sweet potatoes, cooked lentils, sautéed onion and garlic, cumin, coriander, salt, pepper, and fresh cilantro. Mix until well combined.
- Form the mixture into small patties.
- Heat the remaining tablespoon of olive oil in the skillet. Cook patties over medium heat for 4-5 minutes on each side until golden brown and crispy.
- Transfer cooked patties to a plate lined with paper towels.
- Serve warm with yogurt, salad, or dipping sauce of choice.
Notes
These patties are gluten-free and can be adapted for various dietary needs. Great for meal prep and can be frozen for later use.
