Instructions
- Prepare the Potatoes: Begin by peeling and dicing the potatoes into even-sized pieces.
- Layer the Ingredients: In your crock pot, layer the diced potatoes at the bottom, sprinkle the ranch seasoning, half of the cheese, and half of the bacon on top.
- Add the Broth: Pour the broth over the layered ingredients, ensuring it covers all the potatoes.
- Slow Cook: Set your crock pot to cook on low for 7-8 hours or on high for 4 hours, until the potatoes are tender.
- Finish with Cream: Stir in the heavy cream and season with salt and pepper. Use an immersion blender to purée half for a smoother consistency, if desired.
- Serve & Garnish: Ladle the soup into bowls and top with remaining cheese, bacon bits, or green onions.
