Description

This cozy slow cooker pot roast is simple and comforting, featuring tender beef and flavorful vegetables.


Ingredients

  • 34 lbs beef chuck roast
  • 4 cups beef broth
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 1 onion, quartered
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Place the beef roast in the slow cooker.
  2. Add the broth, carrots, potatoes, onion, garlic, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  3. Cover and cook on low for 8-10 hours or until the meat is tender.
  4. For optional gravy, remove the roast and vegetables, mix the cooking liquid in a saucepan, and simmer until thickened. Serve together hot.
