Description

Tender, slow-cooked chicken wrapped in pita bread and topped with creamy tzatziki and fresh vegetables, creating an unforgettable Mediterranean experience.


Ingredients

  • 2 Chicken Breasts
  • 2 tablespoons Olive Oil
  • Juice of 1 Lemon
  • 2 cloves Garlic, minced
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Ground Cumin
  • 4 Pita Breads
  • 1 cup Greek Yogurt
  • 1 medium Cucumber, grated
  • 1 tablespoon Fresh Dill, chopped
  • Salt and Pepper to taste
  • Fresh Toppings: Tomatoes, Red Onion, Lettuce

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, and cumin. Whisk until well blended.
  2. Add chicken breasts to the crockpot and pour the marinade over the top, ensuring the chicken is evenly coated.
  3. Let the chicken marinate in the refrigerator for at least 30 minutes if time allows.
  4. Cook on low for 6-8 hours or high for 3-4 hours until tender.
  5. While cooking, prepare the tzatziki by combining grated cucumber, Greek yogurt, minced garlic, lemon juice, and dill in a mixing bowl. Season with salt and pepper.
  6. Shred the chicken in the crockpot using two forks, mixing it with the cooking juices.
  7. Warm the pita bread and fill each with shredded chicken, tzatziki, and fresh toppings.
  8. Serve immediately and enjoy!

Notes

Tzatziki flavors improve when made a day ahead. This recipe can also be adapted for vegetarian options by substituting chicken with chickpeas or lentils.
